Chicken Cacciatore
Ingredients
2 ½ pounds of chicken pieces
½ cup bacon, chopped
1 tablespoon flour
1 onion, chopped
4 oz mushrooms, chopped
1 green pepper, chopped
2 cloves garlic, crushed
4 oz tomato paste
1 cup chicken stock
1 teaspoon salt
Freshly ground black pepper
10 black, pitted and halved olives
Method
Coat the chicken in flour. Fry bacon until it is brown then add chicken and brown.
Remove chicken and bacon to a casserole, then fry onion, mushrooms, garlic and green pepper for 5 minutes.
Add tomato paste, olives and stock.
Stir until mixture boils then pour into casserole. Add seasonings and cover.
Cook in a slow oven (325 °F) for 2 hours.
