Easy Chicken Cacciatore

Ingredients

4 lb (2 kg) chicken pieces
Seasoned flour
1 green pepper, seeded and diced
1 large onion, chopped
3 cloves garlic, crushed
1 x 17 oz (425g) tin peeled tomatoes
2 bay leaves
3 tablespoons chopped parsley
½ cup dry white wine
Salt and freshly ground black pepper
Black and green olives
Oil for frying

 

Method

Coat the chicken in the seasoned flour. Shake off excess flour.

Heat oil in a heavy based fry pan, fry chicken pieces until golden brown.  Remove chicken from pan, keep warm.

Add the green pepper, onion and garlic and cook for about 5 minutes. Drain liquid off the tinned tomatoes, and add the tomatoes to the pan. Add the bay leaf, salt and pepper. Bring to the boil and simmer for a few minutes. Return the chicken to the pan.

Add the wine, cover and gently simmer for about 45 minutes. Serve garnished with chopped parsley and olives.
